Award-Winning Chef Mel Brings Her Magic to Dock & Go at Milford Waterfront

When we heard that award-winning chef Mel had joined the team at Dock & Go down at Milford Waterfront, we had to pay a visit. And we're delighted to report – it was absolutely worth the trip.

We recently enjoyed a delicious lunch at the waterfront spot, and the "Fish Dog" with chips and mushy peas was a particular highlight. The chips, cooked in beef dripping, were nothing short of amazing. Takeaway classics, done exceptionally well – and that's exactly what Dock & Go is all about.

A Career Built on Passion

Mel's journey in hospitality began at the old Haverfordwest Catering College, where she trained under inspiring chefs and lecturers. She went on to train at the beautiful Warpool Court Hotel in St Davids under chef Ian Mann, learning everything from fishmongery to pâtisserie – foundations that have stayed with her throughout her career.

After two years at the hotel and completing college, Mel moved to England to further develop her skills before returning home to Pembrokeshire ten years later. Alongside a dear friend, she opened The Blue Ball Restaurant in Tenby, where their passion for cooking and dedication to quality led them to win Best Restaurant in Pembrokeshire and receive recognition in both The Guardian and Lonely Planet. After 17 incredible years, they decided it was time to sell the restaurant.

More recently, Mel worked at The Inn at the Sticks, helping it become one of Wales' Top 100 Restaurants and earning a place in the Good Food Guide 2024.

Coming Home to Pembrokeshire

As a proud Pembrokeshire girl, coming home always felt right for Mel. When Nathan and Brian asked her to help shape the food at Dock & Go, she was delighted to be involved.

The ethos at Dock & Go is simple: everyday food, done exceptionally well. From homemade pies and delicious potted desserts to ever-changing specials, everything is made with care and passion. And those beef-dripping fish and chips? They really are to die for.

Whether it's refined French cooking or comforting everyday favourites, great food is about one thing above all else – making it with love. That's what the team at Dock & Go believe, and having tasted it for ourselves, we can confirm they're delivering on that promise.
